|As much as you want||Prepare the rice according to the instruction on the packaging|
Sunflower Oil/ Coconut oil
|As many and whatever veggies you want in your curry
|Put the chopped veggies and the coconut flakes and the oil into the pan and let them heat up for couple of minutes until they are a bit roasted. Once they are a bit roasted fill in 2 shots of water. Then add the rest of the ingredients and let everything cook until the veggies are al dente/done.
Garnish with some fresh cilantro.
