Chinese Glass Noodle Salad

I got inspired by this recipe from my mom. In former times we added chicken to it, however it also goes perfectly without any poultry! This salad tastes even better after 1 day so that it fully soaked up the spices. Always store in the fridge and serve it cold.

Glass noodle salad

Boil the glass noodles according to the package indication.

In the meanwhile cut the onions, spring onions, chili, cucumber, tomatoes and paprika into small pieces as shown on the picture. Once the glass noodles are done, put them together with the chopped ingredients into a bowl and add the soy sauce, cilantro, lemon grass and a pressed lemon into the bowl. Add more in case you feel that more taste is needed.
