Garlic

Coconut oil

Agave syrup

Cut all vegetables and put them into a pan with hot coconut oil. I would put the eggplant before all others as it might take longer. Fry your veggies so that they are still al dente and spice them with the chili and garlic and the agave syrup. The dish will have a slight Moroccan tajine taste.
Couscous As much as you want Cover the couscous with the same amount of hot/boiling water and let it swell. Shall be done within 5 minutes
